Method

1. Heat the oven to 180C.

2. Beat eggs and sugar until pale and thick.

3. Pour in the oil, lemon zest and juice.

4. Fold in flour, baking powder and salt.

5. Bake 35-40 min until a skewer comes out clean.

6. Cool in the tin before turning out.
