Potato moussaka, layer by layer, the way it was made for us on cold Wednesdays.
Fry the onions until soft, add the mince and paprika, and cook until browned. Season well.
Oil a deep baking dish. Layer potatoes, then meat, then potatoes again, seasoning each layer.
Bake covered at 190°C for 40 minutes.
Whisk the eggs with the milk, pour over the top, and bake uncovered another 20 minutes until golden.
Rest before cutting into proud squares.
Some houses add rice to the meat. We do not speak of those houses.
